英文原版讀瞭2遍，熟做其中3個配方，颱灣中文版本又讀瞭1遍，覺得颱灣人並沒有翻譯齣原書中部分關鍵點。到昨天在其他書裏麵看到瞭一個小注解纔發現，這本書CHAD在寫的時候為瞭讓菜鳥不覺得為難，竟然全麵降低10%hyedration，簡直令人發指啊。。可以理解他的想法，但對忠實試驗tartine bread的讀者來說，完全不一樣的麵團狀態，完全不一樣的發酵手感，簡直是奇恥大辱。

按照配方做的Croissant是我迄今為止嘗試中的最好成品，層次分明、賣相尤其好。ATK適閤“新手”嘗試，Tartine是進階版。話說，哪個新手會在傢做Croissant？
