Samin Nosrat is a writer, teacher, and chef. 看完前半部分讲原理的几章,才发现原来学了这么多年的物理化学应该这么用。尤其是作者讲盐的osmosis的部分。后面的菜谱品味也很米其林又够家常,比如炸鸡要好吃,一定要用Clarified butter。还解开了我多年来对于橄榄油的迷思…

评分其实是看了电视,分四集,把烹饪的“秘诀”只归纳成四类是个很有新意的想法,听起来简单,记起来貌似容易,做起来还是会忘或者懒,哈哈。不过还是个很启发的书,毕竟“简单”,还是能学到些的
