Preface<br >IT A L L began with the banning of cyclamates in the<br >fall of 1969. That s when I first began to wonder if eat-<br >ing was hazardous to my health.<br > For ten years I had been enjoying the noncaloric sweet<br >life. I shook a few drops of a miracle liquid into my<br >coffee each morning， quenched my thirst at lunch with<br >a chilled bottle of calorie-free soda， and garnished my<br >dinner salad with a thick， creamy， and non-guilt-<br >provoking diet dressing. Over the years， I read newspaper<br >and magazine stories about cyclamates and saccharin and<br >I was convinced of their safety. I had nothing to worry<br >about. Except watching my weight.<br > Then， almost out of nowhere， the Secretary of Health，<br >Education and Welfare informed me (and millions of<br >other cyclamate users) that the innocent-looking white<br >powder that was perking up my low-cholesterol， low-fat<br >breakfast brought about a cancerous tumor in the bladder<br >of some unfortunate sweet-toothed rodents. Cyclamates<br >disappeared.
