PREFACE<br >AS A NATION WE ARE LITERALLY killing ourselves through our<br >poor eating habits.<br > America produces food-good food-in abundance. There is no<br >lack of information in this country about what constitutes sound<br >dietary habits, and consequently good health, but we ignore it. We have<br >instead chosen to go along with what seems easier in this decade on the<br >go: "fast food," nutritionally empty food, meals on the run, fad diets.<br >The result, of course, is that we are living shorter and less vigorous lives<br >than all reason and available knowledge says we should.<br > I wrote this book because of my deep and continuing concern<br >with the sociological and psychological influences on individuals and on<br >families which are contributing to poor diet and poor health. In so<br >doing I have drawn principally upon two sources: my experiences as a<br >career nutritionist and the Dietary Goals newly established by the United<br >States Senate Select Committee for Nutrition and Human Needs.<br > As a food and nutrition consultant for the American National Red<br >Cross, I have had opportunities to work extensively in this country and<br >abroad. I have helped develop community nutrition programs. As a Red<br >Cross team member I have helped to bandage the wounds-physical,<br >mental and emotional-of people caught up in calamity. During<br >disasters I have gained firsthand knowledge of the problems that<br >confront American families today, thereby broadening my personal<br >experience with contemporary lifestyles, food habits and nutritional<br >awareness.<br >
