It s hard to believe we re putting the
nishing touches on the ninth volume
of Annual Recipes. It seems like yes-
terday that you, our readers, were beg-
ging us to compile a cookbook containing
all the recipes published during a year in
Southern Living.

The avalanche of letters since our first
Annual Recipes in 1979 confirms that you
have enjoyed the cor~venience, of not hav-
ing to clip each month s recipes, allowing
you to keep each issue of Southern Living
magazine intact.
In your letters you ve told us of your
many successes with our recipes, often
describing occasions you ve served partic-
ular recipes or even sending snapshots of
your finished dish. Our recipes have en-
couraged you to try hey7 cooking tech-
niques or to experiment with new or
unusual ingredients on the market.
Many of you have inquired how we
select recipes for our stories or how we
test them in our kitchens. After our story
topics are planned for the year, our food
editors select appropriate recipes from
the thousands submitted each month by
our readers. Before any recipe is pub-
lished, it is tested once or twice by one of
